Preparation
- Preheat your oven to 350°F and coat a 9x13-inch baking dish with cooking spray.
- In a large skillet over medium heat, brown the sausage for 8-10 minutes, breaking it apart as it cooks. Drain off the grease.
- Reduce heat to low, add the softened cream cheese to the sausage, and stir until smooth. Fold in the drained Rotel.
Casserole Assembly
- Spread the frozen tater tots evenly on the bottom of the baking dish.
- Spoon the sausage and cream cheese mixture over the tater tots and top with shredded cheddar.
- In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until fully combined.
- Pour the egg mixture over the casserole evenly.
Baking
- Bake uncovered in the preheated oven for 60 to 70 minutes until the eggs are set and the top is golden brown.
- For a crispy top, broil for 2-3 minutes, but watch closely to prevent burning.
Serving
- Allow the casserole to sit for about 5 minutes before slicing and serving.
