  • 12 links breakfast sausage, fully cooked Any variety works, including pork, chicken, turkey, or plant-based.
  • 3 large eggs
  • 1/4 cup whole milk
  • 1 teaspoon ground cinnamon Adjust according to taste.
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon unsalted butter For the pan.

Method
 

Cooking Sausage Links
  1. If using raw sausage links, cook them in a skillet over medium heat for 8 to 10 minutes until browned and cooked through. Let cool.
  2. If using pre-cooked sausages, ensure they are at room temperature or slightly warmed.
Prepare Bread
  1. Trim crusts off the bread slices and flatten each slice with a rolling pin or suitable object.
Make Egg Custard
  1. In a shallow bowl, whisk together eggs, milk, cinnamon, sugar, and vanilla until frothy.
Assemble Roll Ups
  1. Lay one sausage on a flattened slice of bread and roll it tightly. Press the seam to seal.
  2. Repeat with all slices and sausages, arranging them seam side down.
Dip in Egg Mixture
  1. Dip each roll up into the egg custard, coating it evenly.
Pan Frying
  1. Heat a skillet over medium heat and melt butter. Once foamy, place roll ups seam side down.
  2. Cook for 1 to 2 minutes per side until golden brown, turning to brown all sides.
Serve
  1. Arrange cooked roll ups on a serving plate, dust with powdered sugar and serve with warm maple syrup.
