  • 1.5 pounds boneless, skinless chicken breast tenders
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil For drizzling on vegetables
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup baby carrots
  • 1 tablespoon lemon pepper seasoning Generous sprinkle recommended
  • 0.5 teaspoon garlic powder
  • Salt and black pepper To taste

Method
 

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a large rimmed baking sheet with aluminum foil and lightly coat with cooking spray.
  3. In a medium bowl, crack the egg and whisk until smooth and frothy.
  4. Add chicken tenders to the egg, ensuring each piece is fully coated.
  5. In a large resealable plastic bag, pour in the panko breadcrumbs. Add the egg-coated chicken tenders, seal the bag, and shake until coated.
  6. Arrange the coated chicken tenders on the prepared baking sheet, leaving space between each piece.
  7. Scatter the broccoli, cauliflower, and baby carrots around the chicken.
  8. Drizzle vegetables with olive oil and toss to coat. Sprinkle lemon pepper seasoning, garlic powder, salt, and black pepper over everything.
Cooking
  1. Place the baking sheet in the preheated oven and bake for 20 to 25 minutes. Flip the chicken halfway for even crispiness. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
  2. Remove from the oven and let it rest for a few minutes before serving. Squeeze fresh lemon wedges over the top before serving.

Notes

For the best results, space everything out evenly on the pan, use fresh seasonal vegetables, and don’t skimp on seasoning. A convection oven setting can yield extra crispiness.
