  • 1 pound Large shrimp, peeled and deveined
  • 4 tablespoons Unsalted butter, divided
  • 2 tablespoons Olive oil
  • 4-5 cloves Garlic cloves, minced
  • ½ cup Dry white wine
  • 2 tablespoons Fresh lemon juice
  • ½ teaspoon Kosher salt
  • ¼ teaspoon Black pepper, freshly ground
  • ¼ teaspoon Red pepper flakes, optional
  • 3 tablespoons Fresh parsley, chopped
  • 8 ounces Linguine or spaghetti, optional for serving

Method
 

Preparation
  1. Pat your shrimp completely dry with paper towels and season lightly with salt and pepper.
Flavor Base
  1. Heat a large skillet over medium heat, add olive oil and 2 tablespoons of butter until melted and slightly foamy.
  2. Add minced garlic and stir constantly for 30-45 seconds until fragrant.
Cooking Shrimp
  1. Increase heat to medium-high and add shrimp in a single layer. Cook undisturbed for 90 seconds until bottoms turn pink.
  2. Flip shrimp and cook for another minute until opaque and slightly golden. Remove shrimp to a plate.
Scampi Sauce
  1. Pour white wine into the skillet and scrape up any browned bits, allowing to simmer until reduced by half, about 2-3 minutes.
  2. Stir in lemon juice and remaining butter until sauce is glossy and slightly thickened. Add red pepper flakes if using.
Assembly
  1. Return shrimp to the pan along with any juices from the plate, tossing gently to coat in the sauce.
  2. Serve immediately, and if desired, toss cooked pasta with the sauce before serving.

Notes

To ensure perfect shrimp, avoid overcrowding in the pan and use fresh ingredients for the best flavor. Serve immediately as shrimp toughens quickly when reheated.
