Ingredients
  

Purple Layer (Berry Base)
  • 1 cup frozen blueberries
  • 1/2 cup frozen blackberries
  • 1/2 cup coconut milk
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
Pink Layer (Tropical Middle)
  • 1 cup frozen strawberries
  • 1/2 cup frozen mango chunks
  • 1/2 cup plain Greek yogurt
  • 1/4 cup orange juice
  • 1 tablespoon agave syrup
White Foam Top (Coconut Cream Layer)
  • 1/2 cup chilled coconut cream (the thick stuff from the top of a can)
  • 1 teaspoon lemon juice
  • 1 teaspoon maple syrup
Optional Toppings
  • 2 tablespoons granola
  • 1 tablespoon chia seeds
  • 4-5 slices fresh sliced strawberries
  • edible dried flower petals
  • A drizzle of honey

Method
 

Preparation
  1. Place your two glasses in the freezer for about 5 minutes to keep layers from sliding into each other.
  2. Blend the Purple Layer by adding blueberries, blackberries, coconut milk, honey, and vanilla extract. Blend on high for about 45 seconds until completely smooth.
  3. Pour the purple layer into the chilled glasses, filling them about one-third of the way up.
  4. Set the glasses back in the freezer for 2-3 minutes.
  5. Rinse the blender and blend the Pink Layer by adding strawberries, mango chunks, Greek yogurt, orange juice, and agave syrup. Blend on high for 45-60 seconds.
  6. Pour the pink layer slowly on top of the purple layer, filling up to about two-thirds of the glass. Return to freezer for another 2 minutes.
  7. Whip the Coconut Cream Layer by whisking the chilled coconut cream, lemon juice, and maple syrup until fluffy.
  8. Spoon the coconut cream gently on top of the pink layer to create a soft dome.
  9. Add the toppings: sprinkle granola, add chia seeds, fresh strawberry slices, edible flower petals, and drizzle honey.

Notes

Make sure to use frozen fruit for thick layers and chill your glasses beforehand to maintain layer separation.
