S'Mores Parfaits

Ingredients
  

For the Parfaits
  • 2 boxes instant chocolate pudding mix (3.9 oz each)
  • 2 cups cold milk Use cold milk for the pudding to ensure proper setting.
  • 2 cups whipped topping (Cool Whip or homemade)
  • 2 cups graham cracker crumbs (about 14 full crackers, crushed) Use a mix of fine crumbs and slightly larger bits for texture.
  • 1.5 cups mini marshmallows Cover the whipped topping generously.
For Garnish
  • 2 bars Hershey's chocolate, broken into pieces
  • 6 pieces small graham crackers One for each parfait as garnish.

Method
 

Preparation
  1. Open both boxes of instant chocolate pudding mix and pour them into a large mixing bowl.
  2. Add 2 cups of cold milk and whisk vigorously for 2 to 3 minutes until thick and lump-free.
  3. Refrigerate the pudding for 5 minutes to firm up.
  4. Crush graham crackers by placing them in a zip-lock bag and using a rolling pin to crush them.
  5. Set the crumbs aside and keep 6 whole pieces for garnish.
  6. Line up 6 clear cups or mason jars for assembly.
Assembly
  1. Add about 3 tablespoons of chocolate pudding to the bottom of each cup.
  2. Top with approximately 2 tablespoons of graham cracker crumbs.
  3. Repeat another layer of chocolate pudding (3 tablespoons) over the crumbs.
  4. Spoon a generous 2-tablespoon dollop of whipped topping over the pudding layer.
  5. Pile mini marshmallows generously on top of the whipped topping, about ΒΌ cup per parfait.
Finishing Touches
  1. Toast the marshmallows using a kitchen torch or broil under the oven for 30 to 60 seconds until golden.
  2. Add a piece of Hershey's chocolate on top of each parfait and a small graham cracker piece upright in the marshmallows.
  3. Serve immediately while the marshmallows are warm and the chocolate is melting.

Notes

Use cold milk for the pudding to ensure proper mixing. Assemble close to serving time to maintain the texture of the graham cracker crumbs. Can be prepared ahead but finish with marshmallows right before serving.
