Ingredients
  

For the Cobbler Batter
  • 1/2 cup unsalted butter 1 stick / 113g
  • 1 cup all-purpose flour
  • 1 cup granulated white sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
For the Banana Layer
  • 4 pieces medium ripe bananas, sliced peeled and sliced into 1/4-inch rounds
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice optional, prevents browning
Optional Toppings
  • Vanilla ice cream or fresh whipped cream for serving
  • A drizzle of caramel sauce for serving
  • A pinch of flaky sea salt for contrast

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and melt the butter in a 9x13 inch baking dish for 5 to 7 minutes until completely melted.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add milk and vanilla extract, mixing until smooth.
  3. Slice bananas and toss with brown sugar and cinnamon; optional lemon juice can be added.
Assemble the Cobbler
  1. Pour the batter over the melted butter without stirring, then layer the bananas on top.
Baking
  1. Bake the cobbler for 35 to 40 minutes until golden brown; check for doneness with a toothpick.
  2. If necessary, cover with foil for the last 10 minutes if browning too quickly.
Serving
  1. Let the cobbler rest for at least 15 minutes before serving, ideally with a scoop of vanilla ice cream.

Notes

For variations, consider adding nuts, chocolate chips, or other fruits. Store leftovers in the fridge for up to 3 days.
