Ingredients
  

For the banana layer
  • 5 pieces 5 ripe bananas, thickly sliced Use very ripe bananas for more sweetness.
  • 1/3 cup 1/3 cup brown sugar, packed
  • 1 teaspoon 1 teaspoon ground cinnamon
  • 1 teaspoon 1 teaspoon vanilla extract
For the cheesecake filling
  • 8 ounces 8 ounces cream cheese, softened
  • 1/3 cup 1/3 cup granulated sugar
  • 1 teaspoon 1 teaspoon vanilla extract
For the cobbler batter
  • 1 1/2 cups 1 1/2 cups all-purpose flour
  • 3/4 cup 3/4 cup granulated sugar
  • 2 teaspoons 2 teaspoons baking powder
  • 1/4 teaspoon 1/4 teaspoon salt
  • 1 cup 1 cup milk
  • 1/2 cup 1/2 cup unsalted butter, melted
For the crumble topping
  • 1 cup 1 cup crushed vanilla wafers or graham crackers
  • 1/4 cup 1/4 cup brown sugar
  • 1/2 teaspoon 1/2 teaspoon ground cinnamon
  • 1/4 cup 1/4 cup unsalted butter, melted
Optional for serving
  • Warm caramel sauce Add right before serving.
  • Fresh banana slices
  • Vanilla ice cream or whipped cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly with butter or nonstick spray.
  2. Arrange the thickly sliced bananas in an even layer across the bottom of the prepared dish. Sprinkle the brown sugar and cinnamon evenly over the top, then drizzle with vanilla extract.
Cheesecake Filling
  1. In a medium bowl, beat the softened cream cheese until completely smooth. Add the granulated sugar and vanilla extract, then continue beating until the mixture turns light and fluffy.
  2. Drop spoonfuls of this cheesecake mixture evenly over the banana layer.
Cobbler Batter
  1. In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. Slowly pour in the milk and melted butter, stirring just until combined into a smooth batter.
  3. Pour the batter evenly over the banana and cheesecake layers.
Crumble Topping
  1. In a small bowl, combine the crushed vanilla wafers (or graham crackers) with the brown sugar and cinnamon.
  2. Pour in the melted butter and stir until the mixture turns evenly crumbly. Sprinkle this topping generously over the batter layer.
Baking
  1. Place the dish in the preheated oven and bake for 45 to 50 minutes, or until the top looks golden brown and a toothpick inserted in the center comes out clean.
Resting
  1. Let the cobbler rest for about 10 minutes after removing it from the oven.
Serving
  1. Drizzle warm caramel sauce over the cobbler right before serving. Add fresh banana slices and a scoop of vanilla ice cream or whipped cream if desired.

Notes

For best results, use very ripe bananas, avoid overmixing the batter, and allow the cobbler to rest before slicing. Drizzle caramel sauce just before serving.
