Preparation
- Preheat oven to 425°F (220°C).
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
- Grate the cold butter into the flour mixture and toss to coat until the mixture resembles coarse crumbs.
- Make a well in the center and pour in the cold buttermilk. Stir gently until the dough comes together.
- Turn the dough out onto a floured surface and gently pat into a rectangle. Fold over onto itself about five or six times.
- Pat the dough into a circle about ¾ inch thick and cut out biscuits using a round cutter.
- Place biscuits in a well-buttered cast iron skillet or on a baking sheet, letting them touch. Brush the tops with melted butter.
- Bake in the preheated oven for 15-18 minutes until golden brown. Brush with melted butter once more after baking.
Notes
Keep everything cold for best results. Don't twist the cutter when cutting biscuits. Let biscuits touch in the pan for taller rising.
