Preparation
- Heat olive oil in a large skillet over medium heat. Once it shimmers, toss in the chopped onion. Cook until soft and slightly golden, about 4 minutes.
- Add the minced garlic and stir constantly for about a minute to avoid burning.
Cooking the Beef
- Push the onion and garlic to one side. Add the ground beef and increase heat to medium-high. Brown the beef, breaking it apart.
- Add chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Stir until evenly coated.
- Cook for another 5-7 minutes until deep brown. Remove from heat and let rest for 2 minutes.
Tortilla Prep
- Warm tortillas in a dry skillet over low heat for about 20 seconds per side or in the microwave wrapped in a damp paper towel.
Assembling Tacos
- Lay a warm tortilla flat and spoon a generous portion of spiced beef. Top with shredded lettuce, diced tomatoes, and cheese.
- Add a dollop of sour cream and cilantro, and finish with a squeeze of lime juice. Serve immediately.
Notes
Go easy on the cayenne if cooking for spice-sensitive individuals. You can add hot sauce later but can't un-spice a taco once it's too hot. Let the beef mixture rest before serving to settle flavors.
