  • 1 teaspoon Vanilla extract
  • 1 box Strawberry cake mix (15.25 ounces) Use a name-brand cake mix for consistent results.
For the vanilla cream cheese frosting
  • 4 ounces Cream cheese, softened
  • 1/4 cup Unsalted butter, softened
  • 1 teaspoon Vanilla extract
  • 2 cups Confectioners' sugar

Method
 

Preparation
  1. Preheat your oven to 350°F and let it fully heat.
  2. Line two baking sheets with parchment paper.
  3. In a mixing bowl, combine softened butter, the egg, and vanilla extract. Beat until pale and fluffy.
  4. Gradually stir in the strawberry cake mix until combined.
  5. Chill the dough in the freezer for 15-20 minutes.
Baking
  1. Scoop and roll the dough into balls, spacing them about two inches apart on the baking sheets.
  2. Bake the cookies for 8-10 minutes until edges are barely set.
  3. Let the cookies rest for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
Frosting
  1. In a mixing bowl, beat together softened cream cheese and butter until smooth.
  2. Add vanilla extract and gradually mix in the confectioners' sugar until fluffy.
  3. Once cookies are cooled, spread frosting over each cookie and add decorations if desired.

Notes

Bring butter and cream cheese to room temperature before mixing. Chilling the dough is crucial to prevent excess spread. Store the frosted cookies in the fridge due to the cream cheese frosting.
