Preparation
- Preheat your oven to 350°F (175°C).
- Chop strawberries and toss them with lemon juice in a small bowl, then set aside.
- Sift together flour, baking powder, and salt in a separate bowl and set aside.
Making the Dough
- In a mixer, beat the butter and cream cheese together until smooth.
- Add granulated sugar and mix until pale and fluffy.
- Add eggs one at a time, mixing well after each addition, followed by the vanilla.
- Gradually add the sifted flour mixture to the wet ingredients, mixing slowly.
- Fold in white chocolate chips until evenly distributed.
- Coat chopped strawberries with flour to prevent sinking and gently fold them into the dough.
Chilling and Baking
- Chill the dough in the refrigerator for about 10 minutes.
- Scoop dough onto a baking sheet, leaving about 2 inches between each.
- Bake for 13-15 minutes until edges are golden.
Cooling and Serving
- Let cookies rest for 5 minutes on the baking sheet before transferring to a cooling rack.
