Ingredients

Yogurt Base
  • 2 cups Greek yogurt, plain or vanilla Full-fat Greek yogurt is recommended for creaminess.
  • 2 tablespoons Honey or maple syrup Adjust sweetness based on the tartness of strawberries.
Toppings
  • 1 cup Fresh strawberries, sliced thin
  • 1/2 cup Chopped nuts or granola Optional for crunch.
  • 2 tablespoons Mini chocolate chips Optional for added sweetness.

Method

Preparing Your Baking Sheet
  1. Line a baking sheet with parchment paper, ensuring it covers the edges with some overhang.
Mixing the Yogurt Base
  1. In a mixing bowl, combine Greek yogurt and honey or maple syrup. Stir until smooth and creamy.
  2. Taste and adjust sweetness as needed based on the strawberries.
Spreading and Layering
  1. Pour the yogurt mixture onto the prepared baking sheet and spread into an even layer about half an inch thick.
  2. Scatter sliced strawberries across the yogurt and press them gently into the mixture.
  3. If using, sprinkle chopped nuts or granola, and mini chocolate chips over the top.
Freezing Until Solid
  1. Place the baking sheet in the freezer for at least four hours, preferably overnight.
  2. Check that the edges feel firm and the center shows no give.
Breaking It Into Pieces
  1. Once solid, lift the bark out using the parchment paper overhang and transfer to a cutting board.
  2. Break or cut into irregular pieces as desired.
Serving and Storing
  1. Serve immediately from the freezer for the best texture.
  2. Store leftovers in an airtight container between layers of parchment paper for up to a week.

Notes

For variations, try using different fruits, drizzling melted dark chocolate on top, or adding coconut flakes. Allow the bark to sit at room temperature for a few minutes for a softer texture before serving.
