Preparation
- In a small bowl, combine chili powder, paprika, garlic powder, cumin, kosher salt, and black pepper. Mix until uniform and set aside a small pinch for the creamy sauce.
- Pat the chicken breasts dry and rub the spice blend evenly over both sides. Layer the chicken in the slow cooker.
- Scatter the corn, jalapeño, minced garlic over the chicken, and pour chicken broth around the edges.
Cooking
- Cover and cook on low for 3 to 4 hours or high for 2 to 2.5 hours, reaching an internal temperature of 165°F.
- In a separate bowl, combine mayonnaise, Mexican crema/sour cream, lime juice, lime zest, and the reserved spice blend. Whisk until smooth.
- Once the chicken is cooked, shred it with two forks and return to the slow cooker. Pour the creamy sauce over and add cotija cheese and most of the cilantro. Stir until everything is coated and warm.
Serving
- Serve warm with lime wedges and garnish with remaining cilantro.
Notes
For variations, you can add more jalapeño for spice, use black beans for a vegetarian option, or mix in Mexican blend cheese for extra flavor.
