Ingredients
  

For the steak
  • 1 pound Sirloin or flank steak, thinly sliced
  • Salt and black pepper, to taste
  • 1 tablespoon Olive oil
For the sweet and spicy garlic butter sauce
  • 4 tablespoons Unsalted butter
  • 5 cloves Garlic, minced
  • 2 tablespoons Honey
  • 2 tablespoons Soy sauce
  • ½ teaspoon Red pepper flakes
  • ¼ teaspoon Smoked paprika
For the pasta
  • 8 ounces Fettuccine or rotini
  • Salt for the pasta water
  • ½ cup Reserved pasta water
For garnish
  • Green onions, sliced
  • Fresh parsley, chopped
  • Grated parmesan (optional)

Method
 

Cooking The Steak
  1. Pat the steak dry with paper towels, then season generously with salt and pepper.
  2. Heat olive oil in your skillet over medium-high heat until it shimmers.
  3. Add the steak in a single layer, and let it sit undisturbed for 2 to 3 minutes.
  4. Flip the slices and cook another 2 minutes, until they hit your preferred doneness.
  5. Pull the steak out and set it aside on a plate to rest.
Making The Sweet And Spicy Garlic Butter Sauce
  1. In the same skillet, drop the heat to medium and melt the butter.
  2. Add the minced garlic and stir constantly for about a minute, until fragrant.
  3. Stir in the honey, soy sauce, red pepper flakes, and smoked paprika.
  4. Let the mixture simmer for a minute and taste. Adjust the heat or sweetness to your preference.
Cooking The Pasta
  1. Bring a large pot of salted water to a boil.
  2. Cook your pasta according to package instructions, pulling it a minute early for al dente.
  3. Before draining, reserve half a cup of the starchy pasta water.
  4. Drain the pasta and add it to the skillet with the sauce. Toss to coat evenly.
Bringing Everything Together
  1. Add reserved pasta water a little at a time, stirring to loosen the sauce.
  2. Slice the rested steak against the grain into thin strips and add back to the skillet.
  3. Let everything sit together for a minute over low heat to meld flavors.
Plating
  1. Twirl the pasta onto plates or into shallow bowls, arranging steak strips on top.
  2. Sprinkle sliced green onions, chopped parsley, and a light dusting of parmesan.
  3. Serve immediately while the sauce is glossy and the steak warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water or cream.
