Ingredients
  

For the wings
  • 2 pounds Chicken wings, whole or split into flats and drumettes
  • 1 tablespoon Cooking oil For greasing the wire rack
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
For the orange glaze
  • 1/2 cup Fresh orange juice Fresh juice is recommended
  • 1 tablespoon Orange zest Use fresh zest for better flavor
  • 1/4 cup Honey
  • 3 tablespoons Low-sodium soy sauce
  • 2 cloves Fresh garlic, minced
  • 1 teaspoon Fresh ginger, minced
  • 1/4 teaspoon Cayenne pepper Adjust to taste
  • 1/2 teaspoon Cornstarch Optional, for a thicker glaze
  • 1 teaspoon Cold water For mixing with cornstarch

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with foil and fit a wire rack inside.
  2. Grease the wire rack lightly with oil to prevent the chicken skin from sticking.
  3. If using frozen wings, thaw them completely in the fridge overnight and pat them dry with paper towels.
  4. In a large mixing bowl, toss the wings with oil, salt, and pepper until evenly coated.
Cooking
  1. Arrange the wings in a single layer on the greased wire rack and bake for 40 to 45 minutes, until the internal temperature reaches 165°F (74°C).
  2. While the wings bake, prepare the orange glaze by whisking together the orange juice, zest, honey, soy sauce, garlic, ginger, and cayenne in a bowl.
  3. Pour the mixture into a small saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and let it simmer until reduced by half and glossy.
  4. If using cornstarch, mix it with cold water and add to the simmering glaze in the last few minutes to thicken.
  5. Once the wings are done, place them in a large bowl and pour the warm glaze over them. Toss until coated.

Notes

Serve immediately while wings are hot and the glaze is sticky. Adjust cayenne pepper based on your heat preference. Store leftovers in an airtight container for 3-4 days. Reheat in the air fryer or oven.
