Ingredients
  

For the Meatballs
  • 1 pound lean ground turkey
  • 1 large egg
  • 1 slice white or wheat bread, torn into small pieces
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fresh cilantro, minced
  • 1 tablespoon chives, chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
For the Sauce
  • 3/4 cup sweet chili sauce, store-bought or homemade
  • 1 tablespoon fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon soy sauce

Method
 

Preparation
  1. Whisk together the sweet chili sauce, lime juice, minced garlic, and soy sauce in a small bowl. Set it aside.
  2. Tear the bread into small pieces and place it in a large mixing bowl. Pour the milk over it and let it sit for a minute or two.
  3. Add the ground turkey, egg, minced garlic, grated ginger, cilantro, chives, red pepper flakes, salt, and pepper into the bowl with the soaked bread. Mix together until just combined.
  4. Lightly grease your hands with a bit of oil or cooking spray before shaping the mixture into meatballs.
Cooking
  1. Sear the meatballs in a preheated large, oven-safe skillet over medium heat for about 2 minutes per side.
  2. Pour the sweet chili sauce mixture over the seared meatballs and gently shake the pan to coat evenly.
  3. Bake in a preheated oven at 350°F for 15 to 18 minutes or simmer on medium-low for about 15 minutes on the stove.
Serving
  1. Let the meatballs rest for a few minutes after cooking before serving.
  2. Serve warm, with sauce on top.

Notes

Use lean turkey for juicy meatballs. The bread-soaking step is crucial for tenderness. Adjust the seasoning to taste, and make sure to check the internal temperature reaches 165°F.
