Sweet Raspberry Chocolate Chip Quesadilla

Ingredients
  

Cream Cheese Filling
  • 8 ounces Cream cheese, softened Must be softened for easier mixing.
  • 1/4 cup Light brown sugar Adds sweetness and a hint of molasses flavor.
  • 1 teaspoon Ground cinnamon
Quesadilla Components
  • 4 pieces Flour tortillas Recommended size is around 8 inches.
  • 1/2 cup Raspberry jam Spread a thin layer to avoid mess.
  • 1 cup Chocolate chip cookies, coarsely chopped Adds texture and flavor.
  • 2 tablespoons Butter or cooking spray For cooking the quesadillas.
  • 2 tablespoons Cinnamon sugar For sprinkling on the quesadilla surface.
  • 1/2 cup Fresh raspberries (optional, for serving) Adds freshness when serving.

Method
 

Preparation
  1. In a small bowl, combine softened cream cheese, brown sugar, and ground cinnamon. Stir until smooth.
  2. Spread the cream cheese mixture over half of each tortilla, keeping it thin and leaving a border.
  3. Spread a thin layer of raspberry jam on top of the cream cheese.
  4. Sprinkle the coarsely chopped chocolate chip cookies over the jam.
  5. Fold each tortilla in half and press lightly along the edge to seal.
  6. Lightly coat both sides of the folded quesadilla with butter or cooking spray and sprinkle cinnamon sugar on the outside.
Cooking
  1. Heat a skillet over medium-high heat and cook the quesadillas for about 1 to 2 minutes on each side until golden brown and crisp.
Serving
  1. Remove from the skillet, let cool for a minute, and slice into wedges.
  2. Serve warm with fresh raspberries on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet to maintain crispiness. Freezing is not recommended.
