Preparation
- In a small bowl, combine softened cream cheese, brown sugar, and ground cinnamon. Stir until smooth.
- Spread the cream cheese mixture over half of each tortilla, keeping it thin and leaving a border.
- Spread a thin layer of raspberry jam on top of the cream cheese.
- Sprinkle the coarsely chopped chocolate chip cookies over the jam.
- Fold each tortilla in half and press lightly along the edge to seal.
- Lightly coat both sides of the folded quesadilla with butter or cooking spray and sprinkle cinnamon sugar on the outside.
Cooking
- Heat a skillet over medium-high heat and cook the quesadillas for about 1 to 2 minutes on each side until golden brown and crisp.
Serving
- Remove from the skillet, let cool for a minute, and slice into wedges.
- Serve warm with fresh raspberries on the side.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet to maintain crispiness. Freezing is not recommended.
