Preparation
- Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
Mixing the Dough
- In a large mixing bowl, cream together the softened butter and creamy peanut butter using a mixer until smooth.
- Add granulated sugar and brown sugar; beat on medium-high speed for 2 minutes until light and fluffy.
- Add egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shaping and Baking
- Scoop tablespoon-sized balls of dough and place them about 2 inches apart on the prepared baking sheet.
- Gently press each ball with a fork in a crisscross pattern.
- Bake for 10 to 12 minutes, removing them when the edges are set but the centers look slightly underdone.
- Let the cookies cool on the pan for 5 minutes before transferring them to a wire cooling rack.
Notes
For chewy texture, underbake slightly; cookies will continue to cook on the pan. Store in an airtight container at room temperature for up to 5 days.
