  • 1.5 cups crushed ladyfingers
  • 8 ounces mascarpone cheese Quality matters; avoid cheap mascarpone.
  • 0.25 cups powdered sugar
  • 1 tablespoon espresso powder
  • 0.25 teaspoon vanilla extract
  • 0.5 cups chocolate chips (for coating)
  • 0.5 cups cocoa powder (for rolling)
Optional Add-Ins
  • Chocolate sprinkles, for rolling instead of cocoa powder
  • A splash of coffee liqueur or amaretto for the filling
  • Finely chopped hazelnuts or almonds for crunch

Method
 

Preparation
  1. Stir the espresso powder into two tablespoons of hot water in a small bowl until fully dissolved. Set aside to cool.
  2. Crush ladyfingers into small, even crumbs using a zip-top bag and a rolling pin.
Build the Creamy Mascarpone Base
  1. In a mixing bowl, combine mascarpone cheese and powdered sugar, beating until smooth and fluffy.
  2. Slowly pour in the cooled coffee mixture, blending gently to keep the mixture creamy.
Mix Ingredients
  1. Fold in the crushed ladyfingers and vanilla extract until combined, taking care not to overmix.
Shape the Truffles
  1. Scoop out heaping tablespoons of the mixture and roll each into a ball about the size of a walnut.
  2. Line up the truffles on a parchment-lined baking sheet and refrigerate for about 30 minutes.
Coat and Finish
  1. Melt the chocolate chips in the microwave in short bursts, stirring in between.
  2. Dip each chilled truffle in melted chocolate, letting excess drip back into the bowl, or roll them in cocoa powder instead.
  3. Return coated truffles to the parchment and refrigerate for another 15 minutes to set.

Notes

For best results, keep mascarpone at room temperature and cool the mixing bowl if necessary. Let truffles sit at room temperature for five minutes before serving.
