- Dice the tomatoes into small even pieces. Remove excess seeds if they seem very watery.
- Place them in a bowl and let them sit briefly to release flavor naturally.
Make the Topping
- Add chopped basil, minced garlic, olive oil, salt, and pepper to the tomatoes.
- Add balsamic vinegar if using. Stir gently so tomatoes keep their shape.
- Let the mixture rest for 10 minutes to improve flavor.
Toast the Bread
- Cut baguette into diagonal slices about 1/2 inch thick.
- Brush both sides lightly with olive oil.
- Bake at 400°F (200°C) for 8 to 10 minutes or toast in a skillet until golden.
- Rub the warm toasted bread lightly with the cut side of garlic clove.
Assemble the Bruschetta
- Spoon the tomato mixture generously onto each toast just before serving.
- Drizzle extra olive oil or balsamic glaze if desired.
- Serve immediately while the bread is crunchy and topping is fresh.
