Ingredients
  

For the Tomato Topping
  • 4 pieces ripe tomatoes, diced Use ripe tomatoes for best flavor.
  • 1/4 cup fresh basil, chopped Dried basil does not give the same effect.
  • 2 cloves garlic, minced Garlic gives sharp flavor.
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional) Adds depth of flavor.
  • 1/2 teaspoon salt Necessary for flavor.
  • 1/4 teaspoon black pepper
For the Bread Base
  • 1 piece baguette or rustic loaf, sliced
  • 2 tablespoons olive oil For brushing on bread.
  • 1 clove garlic, halved For rubbing on toasted bread.
Optional Add-Ons
  • Fresh mozzarella
  • Parmesan shavings
  • Balsamic glaze
  • Red chili flakes
  • Avocado slices

Method
 

Preparation
  1. Dice the tomatoes into small even pieces. Remove excess seeds if they seem very watery.
  2. Place them in a bowl and let them sit briefly to release flavor naturally.
Make the Topping
  1. Add chopped basil, minced garlic, olive oil, salt, and pepper to the tomatoes.
  2. Add balsamic vinegar if using. Stir gently so tomatoes keep their shape.
  3. Let the mixture rest for 10 minutes to improve flavor.
Toast the Bread
  1. Cut baguette into diagonal slices about 1/2 inch thick.
  2. Brush both sides lightly with olive oil.
  3. Bake at 400°F (200°C) for 8 to 10 minutes or toast in a skillet until golden.
  4. Rub the warm toasted bread lightly with the cut side of garlic clove.
Assemble the Bruschetta
  1. Spoon the tomato mixture generously onto each toast just before serving.
  2. Drizzle extra olive oil or balsamic glaze if desired.
  3. Serve immediately while the bread is crunchy and topping is fresh.

Notes

Best when served fresh. Store tomato topping separately and re-toast bread before serving if needed.
