Preparation
- Preheat your oven to 350°F and prepare a 12-cup muffin pan with paper liners or by greasing it.
- Grate the medium zucchini and squeeze it to remove excess moisture.
Mixing
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix egg, chocolate milk, white vinegar, oil, and vanilla extract until smooth.
- Combine wet and dry ingredients gently, being careful not to overmix.
- Fold in the grated zucchini and boiling water, mixing until just combined.
- Add mini chocolate chips to the batter and stir gently.
Baking
- Fill each muffin liner about three-quarters full with the batter.
- Bake in the preheated oven for about 20 minutes. Check doneness with a toothpick.
- Allow muffins to cool in the pan for 10 to 15 minutes before transferring to a wire rack.
Notes
Ensure you squeeze the zucchini well to prevent sogginess. Add extra chocolate chips on top for a bakery finish. These muffins can be frozen for up to four months.
