  • 2 cans Chickpeas (garbanzo beans), drained and rinsed
  • 1 cup Mango, diced (fresh or frozen)
  • 1 cup Pineapple, diced (fresh or frozen)
  • 1 cup Pico de gallo store-bought or homemade
  • 1/2 cup Pineapple salsa
  • 1/4 cup Fresh cilantro, finely minced
  • 2 tablespoons Lime juice
  • 1/2 teaspoon Kosher salt plus more to taste
  • 1/4 teaspoon Black pepper
  • 1/8 teaspoon Cayenne pepper (optional)
  • to taste none Tortilla chips or crackers for serving (optional)

Preparation
  1. Step 1: Drain and Rinse Your Chickpeas Thoroughly. Open both cans of chickpeas and pour them into a fine mesh strainer. Rinse under cold running water for about thirty seconds, swishing them around gently.
  2. Step 2: Dice Your Mango and Pineapple. Grab a sharp knife and a sturdy cutting board. If using fresh mango, slice around the pit and cube the flesh into bite-sized pieces, then repeat with fresh pineapple. If you’re using frozen fruit instead, let it thaw slightly on the counter for about ten minutes.
  3. Step 3: Combine Everything in a Large Bowl. Grab your largest mixing bowl, since this salad needs room to toss properly. Add the drained chickpeas, diced mango, diced pineapple, pico de gallo, and pineapple salsa all at once.
  4. Step 4: Add Cilantro and Brighten with Lime. Sprinkle the finely minced cilantro across the top of your mixture. Squeeze the fresh lime juice directly over everything. Stir gently to distribute.
  5. Step 5: Season, Taste, and Adjust. Sprinkle in the kosher salt and black pepper, then give the whole bowl a taste test. If you like a spicy kick, add the optional cayenne pepper now.
  6. Step 6: Chill for Maximum Flavor, or Serve Right Away. Serve the salad immediately, or cover the bowl and refrigerate it for at least thirty minutes.
  7. Step 7: Serve and Store Any Leftovers. Scoop your Tropical Chickpea Salad into bowls, or serve it alongside tortilla chips for dipping.

Notes

Use frozen fruit for convenience without sacrificing flavor. Taste and adjust seasoning before serving since fruit sweetness varies. Chill overnight for deeper flavor. Store leftovers in an airtight container for up to four days.
