Method
Preparation of Sweet Potatoes
- Peel both sweet potatoes and chop them into small, even cubes, roughly half an inch each.
Build Your Flavor Base
- Set a large skillet over medium heat and pour in the olive oil. Once warm, add the chopped onion and minced garlic, stirring until soft and golden.
Brown the Turkey
- Add the ground turkey to the skillet and break it into smaller crumbles while it cooks for 5 to 7 minutes until no pink is left. Season lightly with salt and pepper.
Add the Sweet Potatoes
- Once the turkey is cooked, add the diced sweet potatoes and stir. Cover and cook for about 10 minutes, stirring occasionally.
Season Everything
- Sprinkle in the smoked paprika and cumin, along with additional salt and pepper if needed. Add the chopped bell pepper and stir for 3 to 4 minutes.
Finish With Spinach
- Add the chopped spinach to the skillet, stirring through until wilted, about 1 to 2 minutes. Taste and adjust seasoning as desired before garnishing with fresh parsley.
Notes
Store leftovers in an airtight container in the fridge for up to four days or freeze for up to three months. Reheat in a skillet or microwave.
