Ingredients
  

Cake components
  • 1 box White cake mix — 1 box, 15.25 ounces Use a moist, fluffy variety for best results.
Fruits and herbs
  • 32 medium Fresh strawberries — 32 medium, hulled Choose ripe but firm strawberries.
  • 16 Fresh mint leaves — 16, optional Adds extra color and flavor.
Assembly components
  • 16 Wooden skewers — 16, soaked in water Soak to prevent splintering.
  • 12 ounces Vanilla almond bark — 12 ounces Melted for drizzling.
  • 1 tablespoon Coconut oil — 1 tablespoon Used to help the almond bark melt smoothly.

Method
 

Baking the Cake
  1. Preheat your oven according to the instructions on your cake mix box and prepare a 9x13-inch pan.
  2. Pour in the batter and smooth the top evenly, then bake until golden and springs back when lightly pressed.
Cooling the Cake
  1. Transfer the cake to a cooling rack and let it sit until it reaches room temperature, at least 30 minutes.
Cutting the Cake
  1. Once cooled, slice the cake into cubes roughly 1.5 inches on each side.
Preparing Skewers
  1. Soak the wooden skewers in a shallow dish of water for at least 30 minutes.
Prepping Strawberries
  1. Rinse the strawberries thoroughly, remove stems, and pat them dry with a paper towel.
Assembling the Skewers
  1. Thread a strawberry, followed by a cake cube, then another strawberry onto a soaked skewer.
  2. Add a mint leaf if using. Repeat until each skewer has a balance of cake and fruit.
Melting the Almond Bark
  1. Combine vanilla almond bark and coconut oil in a microwave-safe bowl and microwave in 30-second bursts, stirring in between.
  2. Stop when fully smooth. Overheating can make it grainy.
Drizzling and Chilling
  1. Drizzle the melted almond bark generously over each skewer and transfer to the refrigerator.
  2. Chill for about 30 minutes until the coating sets firm.

Notes

Ensure strawberries are dry for the coating to adhere. Cool cake completely to maintain structure. Assemble close to serving time for the freshest texture.
