Ingredients
  

Dressing
  • 1/2 cup Mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon Honey
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Poppy seeds optional
Salad Ingredients
  • 3 medium Apples (Honeycrisp or Gala), diced Leave skin on for texture
  • 1 cup Seedless red grapes, halved
  • 1 cup Celery, diced
  • 1/2 cup Walnuts, chopped Toast for added flavor
  • 1/4 teaspoon Kosher salt
  • Fresh parsley, chopped optional garnish
  • Bibb lettuce leaves optional, for serving

Method
 

Build the Dressing
  1. In a medium bowl, combine mayonnaise, Greek yogurt, and honey. Whisk until smooth and glossy.
  2. Add fresh lemon juice and lemon zest; mix well. If using, stir in poppy seeds and set aside.
Prep the Fruits and Vegetables
  1. Dice the apples into bite-sized pieces, keeping the skin on.
  2. Halve the grapes and finely dice the celery.
Combine the Produce
  1. In a large mixing bowl, combine diced apples, halved grapes, and diced celery. Gently fold together.
Toss With the Dressing
  1. Pour the dressing over the fruit and vegetable mixture. Toss gently to coat thoroughly.
  2. Taste and sprinkle in kosher salt if necessary.
Chill and Garnish
  1. Cover and refrigerate for at least 30 minutes for best flavor.
  2. Before serving, top with chopped walnuts and parsley if desired.
Plate and Serve
  1. Serve over Bibb lettuce if desired for a polished look.
  2. Enjoy immediately for the best texture.

Notes

To enhance flavor, toast walnuts in a skillet. Use firm apples for best results. Make dressing a day ahead if possible.
