Ingredients
  

For the Base
  • 2 slices thick slices seedless watermelon (cut about 1 inch thick from the widest part)
For the Cream Cheese Topping
  • 8 oz cream cheese, room temperature Soften for easy mixing
  • 1 cup powdered sugar Adjust sweetness to taste
  • 1 tsp vanilla extract
For the Chocolate Drizzle
  • 1 cup milk chocolate chips Swap for dark chocolate for less sugar
  • 1 tsp coconut oil or vegetable shortening
For the Fruit Toppings
  • 1 kiwi, peeled and sliced
  • 1 cup strawberries, hulled and halved
  • 1 cup blueberries, rinsed and dried

Method
 

Preparation of Cream Cheese Mixture
  1. Take cream cheese out of the fridge 30 minutes before use to soften.
  2. Mix cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth.
  3. Taste and adjust sweetness to preference.
Prep Your Fruit
  1. Rinse all fruit under cold water and pat dry.
  2. Hull and halve strawberries, and prep kiwi.
Prep the Watermelon Base
  1. Cut watermelon into 1-inch thick slices.
  2. Pat both sides of each slice dry with paper towels.
Spread the Cream Cheese Layer
  1. Spread cream cheese mixture evenly on each watermelon slice, leaving a border.
Add the Fruit Toppings
  1. Arrange fruit toppings evenly over the cream cheese layer, pressing down gently.
Make and Drizzle the Chocolate
  1. Melt chocolate chips and coconut oil in a microwave, stirring every 30 seconds until smooth.
  2. Let cool slightly before drizzling over the pizza.
Chill and Serve
  1. Cover and refrigerate for 15–30 minutes before serving.
  2. Slice into wedges and serve immediately.

Notes

Best served the same day. Use Greek yogurt for a lighter option. Adjust toppings based on preference.
