Preparation of Cream Cheese Mixture
- Take cream cheese out of the fridge 30 minutes before use to soften.
- Mix cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth.
- Taste and adjust sweetness to preference.
Prep Your Fruit
- Rinse all fruit under cold water and pat dry.
- Hull and halve strawberries, and prep kiwi.
Prep the Watermelon Base
- Cut watermelon into 1-inch thick slices.
- Pat both sides of each slice dry with paper towels.
Spread the Cream Cheese Layer
- Spread cream cheese mixture evenly on each watermelon slice, leaving a border.
Add the Fruit Toppings
- Arrange fruit toppings evenly over the cream cheese layer, pressing down gently.
Make and Drizzle the Chocolate
- Melt chocolate chips and coconut oil in a microwave, stirring every 30 seconds until smooth.
- Let cool slightly before drizzling over the pizza.
Chill and Serve
- Cover and refrigerate for 15–30 minutes before serving.
- Slice into wedges and serve immediately.
Notes
Best served the same day. Use Greek yogurt for a lighter option. Adjust toppings based on preference.
