Ingredients
  

Main Ingredients
  • 1 cup Wheat berries, uncooked Yields about 3 cups cooked
  • 5 ounces Baby spinach leaves About 5 cups
  • 1.5 cups Fresh blueberries Wash before adding
  • 0.5 cup Grated gouda cheese Optional
  • 1/3 cup Dried cranberries
  • 1/3 cup Raisins or dried cherries
  • 1/3 cup Sliced almonds Toast for extra flavor
  • 2 tablespoons Fresh basil, chopped
Vinaigrette
  • 1/3 cup Olive oil
  • 2 tablespoons Honey or agave Adjust to taste
  • 3 tablespoons Apple cider vinegar Adjust to taste
  • 1 teaspoon Dijon mustard
  • Salt and black pepper To taste

Method
 

Cook the Wheat Berries
  1. Rinse the wheat berries under cold water to remove debris, then add them to a pot with plenty of water to cover. Bring to a boil over high heat.
  2. Reduce heat to a gentle simmer and cook for about 30 minutes until tender with a pleasant chew.
  3. Drain excess water and spread the wheat berries on a baking sheet to cool.
Prep the Spinach and Blueberries
  1. While the wheat berries cook, rinse the baby spinach under cold water and pat dry.
  2. Wash the blueberries and drain in a colander, removing any soft or damaged berries.
Build the Salad Base
  1. In a large mixing bowl, combine the cooled wheat berries, spinach, blueberries, and gouda. Toss gently.
  2. Add cranberries, raisins, and almonds, then sprinkle with fresh basil and distribute evenly.
Whisk Together the Vinaigrette
  1. In a small jar, combine olive oil, honey, apple cider vinegar, Dijon mustard, salt, and pepper. Seal and shake until well combined.
  2. Taste and adjust sweetness or tanginess as desired.
Dress, Toss, and Serve
  1. Drizzle half of the vinaigrette over the salad and toss gently to coat.
  2. Taste and add more dressing if needed. Serve immediately or store in an airtight container with dressing on the side.

Notes

Store in an airtight container in the fridge for up to three days. Keep dressing separate for best texture.
