Ingredients
  

Berry Base
  • 2 cups mixed berries, fresh or frozen (strawberries, blueberries, raspberries, blackberries) Frozen berries work just as well as fresh.
  • 1 tablespoon fresh lemon juice Brightens the entire berry flavor.
  • 1 pinch salt Enhances the berry flavors.
Yogurt Base
  • 2 cups full-fat Greek yogurt Provides creaminess and richness.
  • 3 tablespoons honey or pure maple syrup Adjust sweetness to taste.
  • 1 teaspoon pure vanilla extract Adds flavor depth.

Method
 

Preparation
  1. If using fresh berries, rinse and pat dry thoroughly.
  2. Combine all berries in a blender with lemon juice and salt. Blend until smooth.
  3. Optionally, strain the berry mixture for a seedless puree.
Mixing
  1. Add yogurt, honey, and vanilla to the berry puree in the blender. Blend until smooth.
  2. Taste the mixture and adjust sweetness or tartness if needed.
Freezing
  1. Pour the mixture into a lined freezer-safe container and smooth the top.
  2. Cover tightly with plastic wrap or parchment paper.
  3. Freeze for at least 4 to 6 hours, preferably overnight.
Serving
  1. Let ice cream sit at room temperature for 5 to 8 minutes before scooping.
  2. Run the scoop under warm water for easier serving.

Notes

Store covered tightly in the freezer for up to 2 weeks. Let thaw slightly if it becomes too hard.
