Preparation
- Grate the zucchini and place it in a colander. Sprinkle a light pinch of salt and let it rest for 15 minutes to draw out excess moisture.
- After resting, wrap the zucchini in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, whisk together flour, dried chives, garlic powder, salt, and pepper.
- In a small cup, beat the eggs lightly. Add them to the dry ingredients and mix until a thick batter forms.
- Fold in the drained zucchini, corn, and green onions until combined.
Cooking
- Heat enough oil in a large skillet to coat the bottom over medium heat until shimmering.
- Scoop about 1/4 cup of batter into the skillet, gently pressing to flatten each fritter. Leave space between each fritter.
- Cook for 2 to 3 minutes on each side until golden brown. Flip only once.
- Transfer cooked fritters to a plate lined with paper towels to drain excess oil.
Serving
- Mix chopped basil and lemon juice into your favorite mayo or aioli. Serve alongside warm fritters.
Notes
For best results, squeeze the zucchini twice to remove moisture. Keep fritters thin for optimal crispiness. Pair these fritters with green salads or various dips for more flavor options.
