Preparation
- Preheat the oven to 375°F.
- Grate the zucchinis and drain them by twisting them in a kitchen towel to remove excess liquid.
- In a large mixing bowl, combine the drained zucchini with ricotta cheese, shredded mozzarella, and eggs. Mix until evenly combined.
- Add the Parmesan, parsley, oregano, salt, and black pepper. Mix until creamy.
- Unroll the pre-made pie crust into a 9-inch pie dish and press it into the corners.
- Pour the zucchini filling into the prepared crust, smoothing the top.
Baking
- Bake the pie for 35 to 40 minutes, checking at 30 minutes for a golden top and firm filling.
- Cover edges with foil if they brown too quickly.
- After baking, remove from oven and let it rest for 10 minutes before slicing.
Notes
