Preparation
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat.
- Wash and dry the zucchini, then slice into rounds approximately 1/4-inch thick.
- Lay the zucchini slices on paper towels, sprinkle with salt, and let sit for about 5 minutes to draw out moisture. Pat dry.
- Arrange zucchini rounds in a single layer on the prepared baking sheet.
Assembly
- Spoon about 1 teaspoon of sauce onto each zucchini round and spread evenly.
- Sprinkle shredded mozzarella over the sauce, covering it completely, then add a pinch of Parmesan.
- Add your chosen toppings, pressing gently into the cheese.
Cooking
- Bake for 15 to 18 minutes, until the cheese is bubbling and golden.
- Remove from the oven and let rest for 2 minutes before serving.
- Garnish with fresh basil leaves and additional red pepper flakes if desired.
