Ingredients

Main Ingredients
  • 2 medium zucchini, sliced into 1/4-inch rounds Choose medium zucchini with firm, glossy skin.
  • 1/2 cup pizza sauce or thick marinara sauce Use a thick sauce to prevent sogginess.
  • 1 cup shredded mozzarella cheese For a cheesy topping.
  • 1/3 cup mini pepperoni or chopped pepperoni Mini pepperoni fits perfectly on small rounds.
  • 1 teaspoon Italian seasoning For added flavor.
  • 1/4 teaspoon salt For seasoning the zucchini.
  • 1/4 teaspoon black pepper For seasoning the zucchini.
Optional Finishing Touches
  • 2 tablespoons grated Parmesan cheese Sprinkle on top before serving.
  • 2 tablespoons chopped fresh basil For garnish.

Method

Preparation
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rinse and dry the zucchinis, then slice them into 1/4 inch thick rounds.
  3. Blot the zucchini rounds with paper towels to remove excess moisture.
  4. Season the zucchini rounds with salt, black pepper, and Italian seasoning.
  5. Spoon about 1 teaspoon of pizza sauce onto each zucchini round.
  6. Top each round with about 2 teaspoons of shredded mozzarella and 2-3 mini pepperoni pieces.
Baking
  1. Bake the zucchini bites in the preheated oven for 8 to 12 minutes, or until the cheese is fully melted and the zucchini is tender.
  2. Optionally, broil for an additional 1 to 2 minutes for extra browning.
  3. Let the bites rest for 2 to 3 minutes before serving.
Serving
  1. Sprinkle with grated Parmesan cheese and fresh basil before serving warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. It's best to reheat in the oven at 375°F for about 5 minutes to retain crispiness.
