  • 1 cup granulated sugar plus 2 tablespoons for topping
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 3 cups fresh strawberries, hulled and halved Choose ripe, deeply red strawberries for best flavor.

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a 9-inch round pie dish by coating it with cooking spray or softened butter.
  2. In a large mixing bowl, whisk together the granulated sugar, flour, and salt until fully blended.
  3. Melt the butter in a microwave-safe bowl in 15-second bursts. Allow it to cool slightly before whisking in the eggs, vanilla, and almond extract until smooth.
  4. Pour the butter and egg mixture into the dry ingredients and stir gently until just combined.
  5. Fold in two cups of the halved strawberries, being careful not to crush them.
  6. Spread the batter into the prepared pie dish and arrange the remaining strawberries over the top, pressing them lightly into the batter.
  7. Sprinkle the remaining two tablespoons of sugar over the top of the pie.
Baking
  1. Place the pie in the preheated oven and bake for 34 to 39 minutes, checking for golden edges and a slight jiggle in the center.
  2. Once baked, remove the pie and allow it to cool completely before slicing, ideally for at least one hour.

Notes

For the best results, measure the flour and sugar accurately and bake closer to 34 minutes for a gooier center. Store leftovers airtight at room temperature for up to five days.
