Wet Ingredients
  • 1 cup unsalted butter, softened Should be at room temperature.
  • 0.75 cup granulated white sugar Provides sweetness and texture.
  • 0.75 cup packed light brown sugar Adds moisture and flavor.
  • 2 large eggs Should be at room temperature.
  • 2 teaspoons pure vanilla extract Enhances the flavor.
Mix-Ins
  • 1.5 cups raisins Soak if dry for better texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) for 15 minutes and prepare a 9x13 inch baking pan by lining it with parchment paper or greasing it.
Mixing Dry Ingredients
  1. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt until well combined.
Creaming Butter and Sugars
  1. In a stand mixer, cream the softened butter, granulated sugar, and brown sugar on medium speed for 3-4 minutes until light and fluffy.
Adding Eggs and Vanilla
  1. Add eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
Combining Ingredients
  1. Gradually add the flour mixture to the butter mixture until just combined. Do not overmix.
  2. Fold in the oats and raisins until evenly mixed.
Baking
  1. Spread the mixture evenly in the prepared pan and bake for 25-30 minutes, or until the edges are golden and the center is just set.
  2. Let cool for at least 20-30 minutes before cutting.

Notes

Store in an airtight container for up to 5 days. These bars freeze well for up to 3 months.
